Yum, versatile little balls of meat. What more needs to be said. So without further adieu let’s have a recipe.

  • 2 lbs ground meat (I usually use a mixture of pork and beef or venison)
  • 1 finely diced onion (or 1 tsp onion powder)
  • 1 -2 cloves of garlic pressed or finely diced (or substitute 1 tsp garlic powder)
  • 1 T oregano
  • 1 tsp turmeric
  • 1/2 tsp thyme
  • 1/2 tsp basil
  • 1 tsp salt
  • 1 T nutritional yeast (optional)

Place meat and seasonings in a bowl and mix with very clean hands until thoroughly mixed. Shape into 1 inch balls and place on a baking sheet. Bake for 10-20 minutes (depending on the size) at 350 until cooked through and lightly browned.

If I’m making soup I prepare the meatballs and leave them uncooked then add them to the boiling soup to cook.

Also for soup you can make the meatballs smaller if you like.
