After unsuccessfully trying to reintroduce eggs twice, sadly I am going to have to admit defeat for now. So, no real aioli for me. However, one of my joys in life is chips and dip of any kind. Something needed to be done. Shortly after starting the AIP I discovered homemade plantain chips and sweet potato chips. Hallelujah!!
In a rush to get to my girls night out, I whipped up this recipe that actually came to me in bed the night before. Yep, that’s what I do people, lay bed at night and think up recipes..
Since I was in a huge hurry there are no pictures but I promise I’ll add some when I make it again.
So here it is: yummy, garlicy almost aioli:
- 1 Avocado
- 2-4 cloves of garlic
- Juice of 1/2 a lime
- 1/4 cup extra virgin olive oil
- 1-2 tablespoons of coconut milk or cream
- Place the first four ingredients in a blender. Blend on high until smooth and add coconut milk or cream until the mixture is the consistency you like.
